Lee’s Summit cook honored for cookie recipe

Cathi Mims, of Lee’s Summit, recently was awarded a blue ribbon for her cookie recipe at social network for home cooks.

Janet Tharpe, food editor at Just a Pinch Recipes ( www.justapinch.com) named Mims’s Chocolate Chip Peanut Butter Caramel Pecan Cookies a winner because they are both tasty and easy to prepare.

“When a friend was describing what the perfect cookie would be if it existed, I decided to create a recipe to give her as a Christmas present,” Mims said.

Mims is one of 99 Lee’s Summit residents sharing recipes with the social network, which in two years has become one of the largest database of user-posted recipes. On the site users can post their own family tested and approved recipes and or find recipes submitted by others to try, use a menu planner and grocery list, create custom cookbooks, print hundreds of grocery coupons, enter recipe contests and join discussion groups. They may also use PinchIt a site feature that allows users to capture and share recipes from virtually anywhere online and integrate them into their digital recipe boxes.

“We continually add new features to the club based on the feedback of our members,” Tharpe said. “It’s because of people like Cathi Mims, who is proud to share her family’s recipes with other home cooks, that the club has become so popular and is growing so fast.”

Chocolate Chip Peanut Butter Caramel Pecan Cookies


• 1/2 c butter, softened

• 1 c plus 1 tsp sugar, divided

• 1 c light brown sugar, tightly packed

• 2 eggs

• 2 tsp vanilla extract

• 2 1/4 c all purpose flour

• 3/4 c baking cocoa

• 1 tsp baking soda

• 1 c chopped pecans, divided by 1/2 cup

• 1 pkg 13 oz package Rolo candies

• 1 c peanut butter

• 1/2 c semi-sweet mini chocolate chips


Preheat oven to 375 degrees. In a large mixing bowl, cream butter, peanut butter, 1 cup sugar and brown sugar until well blended. Beat in eggs and vanilla. Combine flour, cocoa, and baking soda in a separate bowl; gradually add to creamed mixture just until combined. Stir in 1/2 cup pecans and mini chocolate chips. Shape dough by tablespoons around each Rolo. In a small bowl, combine remaining pecans and sugar; dip each cookie halfway into pecan mixture. Place cookie nut side up on ungreased baking sheets. Bake for 7-10 minutes or until top is slightly cracked. Cool for 3 minutes; remove to wire racks to cool completely.
